Main Ingredients
- 1 lb Chicken breast, cooked and shredded
- 2 cans Great Northern beans, drained and rinsed
- 1 can Corn, drained
- 1 cup Chicken broth
- 1 cup Sour cream
- 1 cup Monterey Jack cheese, shredded
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Olive oil
- 1 teaspoon Cumin
- 1 teaspoon Oregano
- 1 teaspoon Chili powder
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 1 can Green chilies, chopped
Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
Add minced garlic and cook for another minute.
Stir in cumin, oregano, chili powder, salt, and black pepper.
Add chicken broth, cooked chicken, beans, corn, and green chilies. Bring to a simmer.
Reduce heat and simmer for 20 minutes, stirring occasionally.
Remove from heat and stir in sour cream and shredded Monterey Jack cheese until melted and well combined.
Serve hot, garnished with additional cheese, sour cream, or fresh cilantro if desired.
