Instructions
Heat the olive oil in a large pot over medium heat.
Add the onions and garlic, and sauté until softened.
Add the carrots and celery, and cook for another 5 minutes.
Pour in the vegetable broth and bring to a boil.
Add the tomatoes, salt, and pepper. Reduce heat and simmer for 20 minutes.
Stir in the spinach and cook for another 5 minutes.
Serve hot and enjoy!
