Ingredients 

Main Ingredients

  • 2 cups Cooked chicken breast, shredded
  • 1 cup Cheddar cheese, shredded
  • 4 Large flour tortillas
  • 1 tablespoon Olive oil
  • 1 Bell pepper, diced
  • 1 Onion, diced
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • to taste Salt and pepper

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced bell pepper and onion, and cook until soft.
  3. Add the shredded chicken, chili powder, cumin, salt, and pepper. Stir to combine and cook for 2-3 minutes.
  4. Remove the chicken mixture from the skillet and set aside.
  5. Place a tortilla in the skillet and sprinkle with cheese. Add a portion of the chicken mixture on top, then sprinkle more cheese over the chicken.
  6. Top with another tortilla and cook until the bottom tortilla is golden brown and the cheese is melted. Flip and cook the other side.
  7. Repeat with the remaining tortillas and filling.
  8. Cut into wedges and serve warm.
