Ingredients 

Main Ingredients

  • 1 lb Shrimp shells from about 2 lbs of shrimp
  • 1 Onion chopped
  • 2 stalks Celery chopped
  • 1 Carrot chopped
  • 2 cloves Garlic smashed
  • 8 cups Water
  • 1 teaspoon Black peppercorns
  • 2 sprigs Thyme

Instructions 

  1. 1. In a large pot, combine shrimp shells, onion, celery, carrot, garlic, and water.
  2. 2. Bring to a boil, then reduce heat and simmer for 45 minutes.
  3. 3. Strain the stock through a fine-mesh strainer, discarding solids.
  4. 4. Use immediately or store in the refrigerator for up to 3 days, or freeze for up to 3 months.
