Ingredients

  • 4 medium Beets peeled and sliced
  • 1 cup Vinegar white or apple cider
  • 1 cup Water
  • ½ cup Sugar
  • 1 tablespoon Salt
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Peppercorns

Instructions 

  1. 1. Boil the beets in a pot of water until tender, about 30 minutes.
  2. 2. Drain and cool the beets, then peel and slice them.
  3. 3. In a separate pot, combine vinegar, water, sugar, salt, mustard seeds, and peppercorns. Bring to a boil.
  4. 4. Place the sliced beets in a jar and pour the hot vinegar mixture over them.
  5. 5. Let the jar cool to room temperature, then refrigerate for at least 24 hours before serving.
