Ingredients 

Main Ingredients

  • 1 cup lentils rinsed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots carrots chopped
  • 1 stalk celery chopped
  • 1 can diced tomatoes 14.5 oz can
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onions, garlic, carrots, and celery. Sauté until vegetables are tender.
  3. 3. Stir in cumin and paprika, cook for another minute.
  4. 4. Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  5. 5. Reduce heat and simmer for 30-40 minutes, until lentils are tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
