Ingredients 

Main Ingredients

  • 2 cups Gluten-free pasta
  • 1 cup Cooked chicken breast, diced
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • ¼ cup Red onion, finely chopped
  • ¼ cup Olive oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Cook the gluten-free pasta according to the package instructions. Drain and set aside.
  2. 2. In a large mixing bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, and red onion.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper.
  4. 4. Pour the dressing over the pasta salad and toss to coat evenly.
  5. 5. Serve immediately or refrigerate for later.
