- 2 cups Cooked chicken, diced
- 1 cup Pineapple chunks
- ½ cup Celery, chopped
- ¼ cup Red onion, finely chopped
- ½ cup Mayonnaise
- 1 tablespoon Curry powder
- 1 tablespoon Lemon juice
- to taste Salt and pepper
In a large mixing bowl, combine the chicken, pineapple, celery, and red onion.
In a separate small bowl, mix together the mayonnaise, curry powder, and lemon juice.
Pour the dressing over the chicken mixture and stir until well combined.
Season with salt and pepper to taste.
Chill in the refrigerator for at least 30 minutes before serving.
