Curried Egg Sandwiches

- 6 large Eggs hard-boiled
- ¼ cup Mayonnaise
- 1 tablespoon Curry powder
- 1 teaspoon Salt to taste
- 8 slices Bread toasted
- 1 tablespoon Chives chopped, optional
Peel and chop the hard-boiled eggs.
In a mixing bowl, combine chopped eggs, mayonnaise, curry powder, and salt. Mix well.
Toast the bread slices.
Spread the egg mixture onto four slices of toasted bread. Top with the remaining slices to form sandwiches.
Optional: Garnish with chopped chives before serving.
