Ingredients

  • 1 lb Crabmeat fresh or canned
  • 2 cups Heavy cream
  • 2 cups Chicken broth
  • 1 tablespoon Butter
  • 1 tablespoon Flour
  • 1 small Onion finely chopped
  • 1 clove Garlic minced
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  3. 3. Stir in the flour and cook for another minute.
  4. 4. Gradually add the chicken broth, stirring constantly to avoid lumps.
  5. 5. Add the heavy cream and bring to a gentle simmer.
  6. 6. Add the crabmeat and season with salt and black pepper to taste.
  7. 7. Use a blender to puree the soup until smooth.
  8. 8. Return the bisque to the pot and heat through before serving.
