Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 unit Onion, diced
  • 2 cloves Garlic, minced
  • 1 unit Red Bell Pepper, diced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 4 cups Chicken Broth
  • 2 cups Cooked Chicken, shredded
  • 1 can Diced Tomatoes
  • 1 cup Corn Kernels
  • 1 cup Black Beans, drained and rinsed
  • to taste Salt and Pepper
  • 1 unit Lime, cut into wedges for serving
  • 1 handful Cilantro, chopped for garnish
  • 1 cup Tortilla Chips, crushed for serving

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and diced red bell pepper, cook for another 3 minutes.
  4. Stir in ground cumin and chili powder, cook for 1 minute.
  5. Add chicken broth, shredded chicken, diced tomatoes, corn, and black beans. Bring to a boil.
  6. Reduce heat and simmer for 15 minutes. Season with salt and pepper to taste.
  7. Serve hot, garnished with lime wedges, chopped cilantro, and crushed tortilla chips.
