- 2 lbs chicken breasts boneless, skinless
- 1 large onion chopped
- 3 cloves garlic minced
- 6 cups chicken broth
- 2 cans hominy drained and rinsed
- 1 tablespoon oregano dried
- 1 teaspoon cumin ground
- 2 teaspoon salt
- 1 teaspoon black pepper ground
- 1 cup cilantro chopped, for garnish
- 1 large lime cut into wedges, for serving
1. In a large pot, combine the chicken breasts, chopped onion, minced garlic, and chicken broth. Bring to a boil.
2. Reduce heat and simmer for about 20 minutes, or until the chicken is cooked through.
3. Remove the chicken from the pot and shred it using two forks.
4. Return the shredded chicken to the pot. Add the hominy, oregano, cumin, salt, and black pepper. Simmer for another 30 minutes.
5. Serve hot, garnished with chopped cilantro and lime wedges on the side.
