Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken Broth
  • 2 cups Water
  • 3 medium Potatoes peeled and diced
  • 2 cups Cooked Chicken shredded
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 cup Heavy Cream

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until softened.
  2. Add chicken broth, water, and diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  3. Add shredded chicken, salt, pepper, and thyme. Simmer for another 10 minutes.
  4. Stir in heavy cream and cook for an additional 5 minutes. Adjust seasoning if needed. Serve hot.
