Chicken and Gnocchi Soup Recipe

Main Ingredients
- 2 tablespoon olive oil
- 1 cup onion, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 3 cloves garlic, minced
- 1 lb chicken breast, cooked and shredded
- 4 cups chicken broth
- 2 cups half-and-half
- 1 lb gnocchi
- 2 cups spinach, chopped
- to taste salt and pepper
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Cook until tender.
Add garlic and cook for another minute.
Add chicken, chicken broth, and half-and-half. Bring to a simmer.
Add gnocchi and cook until they float to the top.
Stir in spinach and season with salt and pepper. Serve hot.
