Ingredients

  • 2 tablespoon olive oil
  • 1 cup onion, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 3 cloves garlic, minced
  • 1 lb chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 2 cups half-and-half
  • 1 lb gnocchi
  • 2 cups spinach, chopped
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until tender.
  3. Add garlic and cook for another minute.
  4. Add chicken, chicken broth, and half-and-half. Bring to a simmer.
  5. Add gnocchi and cook until they float to the top.
  6. Stir in spinach and season with salt and pepper. Serve hot.
