Ingredients

  • 2 cups Black Beans cooked or canned, drained and rinsed
  • 1 cup Corn frozen or canned, drained
  • 1 cup Salsa
  • 1 cup Shredded Cheese
  • 4 large Tortillas
  • 1 tablespoon Olive Oil

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add black beans and corn to the skillet. Cook for 5 minutes, stirring occasionally.
  3. Stir in salsa and cook for another 2 minutes.
  4. Warm tortillas in a separate pan or microwave.
  5. Fill each tortilla with the bean mixture and top with shredded cheese.
  6. Roll up the tortillas and serve warm.
