Main Ingredients
- 1 lb Ground Beef
- 1 cup Lentils rinsed
- 2 cups Carrots diced
- 1 cup Celery diced
- 1 cup Onion diced
- 4 cups Beef Broth
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black Pepper to taste
- 2 cloves Garlic minced
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Basil
- 1 can Diced Tomatoes 14.5 oz can
1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
2. Add the diced onions, carrots, and celery. Cook until the vegetables are tender, about 5-7 minutes.
3. Stir in the minced garlic, dried thyme, and dried basil. Cook for another minute.
4. Add the beef broth, lentils, diced tomatoes, salt, and black pepper. Bring to a boil.
5. Reduce heat and let the soup simmer for about 30 minutes, or until the lentils are tender.
6. Taste and adjust seasoning if needed. Serve hot.
