Ingredients 

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 2 tablespoon Olive oil
  • 1 Large onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef broth
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 1 cup Celery, sliced
  • 2 tablespoon Tomato paste
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add beef cubes and brown on all sides. Remove and set aside.
  3. 3. In the same pot, add onions and garlic. Cook until softened.
  4. 4. Stir in tomato paste, thyme, and rosemary. Cook for another minute.
  5. 5. Return beef to the pot. Add beef broth, carrots, potatoes, and celery.
  6. 6. Bring to a boil, then reduce heat and simmer for 2 hours.
  7. 7. Season with salt and pepper to taste. Serve hot.
