Beef Shank Vegetable Soup Recipe

Main Ingredients
- 2 lbs beef shank
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 potatoes, diced
- 4 cups beef broth
- 2 cups water
- 2 cloves garlic, minced
- 1 bay leaf
- Salt and pepper to taste
In a large pot, brown the beef shank on all sides.
Add the onion, garlic, carrots, and celery. Cook until softened.
Pour in the beef broth and water. Add the bay leaf.
Bring to a boil, then reduce heat and simmer for 1.5 hours.
Add the potatoes and cook for another 30 minutes.
Season with salt and pepper to taste.
