Ingredients

  • 3 lb Beef Chuck Roast
  • 2 cups Beef Broth
  • 1 cup Red Wine
  • 4 Carrots peeled and cut into chunks
  • 4 Potatoes peeled and cut into chunks
  • 1 Onion sliced
  • 3 cloves Garlic minced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Thyme dried
  • 1 teaspoon Rosemary dried
  • to taste Salt and Pepper

Instructions 

  1. 1. Preheat your oven to 275°F (135°C).
  2. 2. Season the beef chuck roast with salt and pepper.
  3. 3. Heat the olive oil in a Dutch oven over medium-high heat. Sear the roast on all sides until browned.
  4. 4. Remove the roast and set aside. In the same pot, add the onions and garlic, cooking until softened.
  5. 5. Add the red wine to deglaze the pot, scraping up any browned bits from the bottom.
  6. 6. Return the roast to the pot, add the beef broth, thyme, and rosemary. Bring to a simmer.
  7. 7. Cover the pot and transfer to the preheated oven. Cook for about 4 hours, or until the meat is tender.
  8. 8. Add the carrots and potatoes to the pot during the last hour of cooking.
  9. 9. Remove the pot from the oven and let the roast rest for a few minutes before serving.
