Instructions
1. In a large pot, brown the beef over medium heat.
2. Add the onion and garlic, cook until softened.
3. Stir in the beets, carrots, and tomato paste. Cook for a few minutes.
4. Pour in the beef broth and bring to a boil. Reduce heat and simmer for 1 hour.
5. Add the cabbage and vinegar. Simmer for another 30 minutes.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with a dollop of sour cream and fresh dill.
