Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 lb Chicken Breast, cubed
  • 2 cans Great Northern Beans, drained and rinsed
  • 4 cups Chicken Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • ½ teaspoon Chili Powder
  • ¼ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 1 cup Sour Cream
  • 1 cup Shredded Cheese

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add cubed chicken breast and cook until no longer pink.
  5. Add the beans, chicken broth, cumin, oregano, chili powder, salt, and black pepper. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Stir in sour cream and shredded cheese until melted and well combined.
  8. Serve hot and enjoy!
