White Bean Chicken Chili

Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 lb Chicken Breast, diced
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cans White Beans, drained and rinsed
  • 4 cups Chicken Broth
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Corn
  • 1 cup Sour Cream for serving
  • 1 cup Cilantro, chopped for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Add chopped onion and minced garlic, cook until softened.
  4. Add white beans, chicken broth, ground cumin, dried oregano, salt, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add corn and cook for another 5 minutes.
  7. Serve hot, topped with sour cream and chopped cilantro.
