Vietnamese Chicken Salad

Salad Ingredients
- 2 cups Shredded Chicken Cooked
- 2 cups Shredded Cabbage
- 1 cup Julienned Carrots
- 1 cup Sliced Cucumbers
- ½ cup Chopped Fresh Mint
- ½ cup Chopped Fresh Cilantro
Dressing Ingredients
- ¼ cup Fish Sauce
- ¼ cup Lime Juice Freshly Squeezed
- 2 tablespoons Sugar
- 1 clove Garlic Minced
- 1 piece Red Chili Sliced
In a large mixing bowl, combine shredded chicken, cabbage, carrots, cucumbers, mint, and cilantro.
In a separate bowl, whisk together fish sauce, lime juice, sugar, minced garlic, and sliced red chili until the sugar is dissolved.
Pour the dressing over the salad and toss well to combine.
Serve immediately or refrigerate for up to 2 hours before serving.
