Vegan Beef Broth Recipe

Main Ingredients
- 1 large onion, chopped
- 2 carrots, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 1 cup mushrooms, sliced
- ¼ cup soy sauce
- ¼ cup nutritional yeast
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 8 cups water
- to taste Salt and pepper
Heat a large pot over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
Add the garlic and mushrooms, cook for another 5 minutes.
Stir in the soy sauce, nutritional yeast, tomato paste, thyme, and rosemary.
Pour in the water and bring to a boil. Reduce heat and simmer for 1 hour.
Season with salt and pepper to taste. Strain the broth and discard the solids.
