Ingredients 

Main Ingredients

  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • ¼ cup soy sauce
  • ¼ cup nutritional yeast
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 8 cups water
  • to taste Salt and pepper

Instructions 

  1. Heat a large pot over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  2. Add the garlic and mushrooms, cook for another 5 minutes.
  3. Stir in the soy sauce, nutritional yeast, tomato paste, thyme, and rosemary.
  4. Pour in the water and bring to a boil. Reduce heat and simmer for 1 hour.
  5. Season with salt and pepper to taste. Strain the broth and discard the solids.
