Ingredients

  • 1 cup Green beans trimmed and cut into 1-inch pieces
  • 1 cup Kidney beans drained and rinsed
  • 1 cup Chickpeas drained and rinsed
  • ¼ cup Red onion finely chopped
  • ¼ cup Parsley chopped
  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Sugar
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. In a large mixing bowl, combine green beans, kidney beans, chickpeas, red onion, and parsley.
  2. In a small bowl, whisk together olive oil, red wine vinegar, sugar, salt, and black pepper.
  3. Pour the dressing over the bean mixture and toss to coat evenly.
  4. Chill in the refrigerator for at least 1 hour before serving.
