Ingredients

  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 cup Peanut Butter
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Lime Juice
  • 1 tablespoon Honey
  • 1 clove Garlic minced
  • 1 teaspoon Ginger grated
  • 1 cup Coconut Milk
  • 2 tablespoon Vegetable Oil
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Heat the vegetable oil in a skillet over medium heat.
  2. 2. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  3. 3. In a mixing bowl, combine peanut butter, soy sauce, lime juice, honey, garlic, ginger, and coconut milk. Stir until smooth.
  4. 4. Pour the peanut sauce over the chicken in the skillet. Stir to coat the chicken evenly.
  5. 5. Simmer for 5-10 minutes, until the sauce thickens slightly.
  6. 6. Season with salt and pepper to taste. Serve hot.
