Main Ingredients
- 2 cups Coconut milk
- 2 cups Chicken broth
- 1 tablespoon Red curry paste
- 1 tablespoon Fish sauce
- 1 tablespoon Lime juice
- 1 cup Sliced mushrooms
- 1 cup Shredded chicken
- 1 tablespoon Sugar
- 1 tablespoon Grated ginger
- 2 cloves Garlic, minced
- 1 stalk Lemongrass, chopped
- 1 handful Cilantro, chopped
1. In a pot, combine coconut milk and chicken broth. Bring to a simmer.
2. Add red curry paste, fish sauce, lime juice, and sugar. Stir well.
3. Add mushrooms, chicken, ginger, garlic, and lemongrass. Simmer for 10 minutes.
4. Garnish with cilantro before serving.
