- 2 cups Black-eyed peas, cooked
- 1 cup Corn, cooked
- 1 cup Diced tomatoes
- 1 cup Chopped bell pepper
- ½ cup Chopped red onion
- ¼ cup Chopped cilantro
- ¼ cup Olive oil
- ¼ cup Red wine vinegar
- 1 teaspoon Salt
- ½ teaspoon Black pepper
In a large mixing bowl, combine black-eyed peas, corn, tomatoes, bell pepper, red onion, and cilantro.
In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
Pour the dressing over the vegetables and toss to coat evenly.
Chill in the refrigerator for at least 1 hour before serving.
Serve with tortilla chips or as a side dish.
