Ingredients

  • 4 cups sliced summer squash
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 1 cup crushed crackers
  • 2 tablespoons butter melted
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, boil sliced squash and chopped onion until tender, about 5 minutes. Drain well.
  3. In a mixing bowl, combine the cooked squash and onion, shredded cheddar cheese, sour cream, and salt and pepper to taste. Mix well.
  4. Transfer the mixture to a baking dish. In a small bowl, mix crushed crackers with melted butter. Sprinkle over the squash mixture.
  5. Bake in the preheated oven for 25 minutes, or until the top is golden brown.
