Ingredients 

Main Ingredients

  • 1 lb Beef stew meat cut into bite-sized pieces
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 can Diced tomatoes 14.5 oz can
  • 4 cups Beef broth
  • 1 cup Green beans cut into 1-inch pieces
  • 1 cup Corn kernels
  • 1 teaspoon Chili powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper or to taste
  • 1 tablespoon Olive oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
  2. 2. Add onions and garlic, cook until softened.
  3. 3. Stir in carrots, celery, and green beans. Cook for 5 minutes.
  4. 4. Add diced tomatoes, beef broth, corn, chili powder, paprika, salt, and pepper. Bring to a boil.
  5. 5. Reduce heat and simmer for 30 minutes, or until vegetables are tender.
  6. 6. Adjust seasoning if necessary. Serve hot.
