- 1 lb Beef stew meat cut into bite-sized pieces
- 1 cup Carrots sliced
- 1 cup Celery sliced
- 1 cup Onion chopped
- 2 cloves Garlic minced
- 1 can Diced tomatoes 14.5 oz can
- 4 cups Beef broth
- 1 cup Green beans cut into 1-inch pieces
- 1 cup Corn kernels
- 1 teaspoon Chili powder
- 1 teaspoon Paprika
- 1 teaspoon Salt or to taste
- ½ teaspoon Black pepper or to taste
- 1 tablespoon Olive oil
1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
2. Add onions and garlic, cook until softened.
3. Stir in carrots, celery, and green beans. Cook for 5 minutes.
4. Add diced tomatoes, beef broth, corn, chili powder, paprika, salt, and pepper. Bring to a boil.
5. Reduce heat and simmer for 30 minutes, or until vegetables are tender.
6. Adjust seasoning if necessary. Serve hot.
