Ingredients 

Main Ingredients

  • 1 lb Chicken Breast diced
  • 1 cup Corn frozen or fresh
  • 1 cup Black Beans drained and rinsed
  • 1 cup Diced Tomatoes canned
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 4 cups Chicken Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil and cook the diced chicken until browned.
  2. 2. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Stir in the cumin and chili powder, cooking for another minute.
  4. 4. Add the chicken broth, corn, black beans, and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat and let simmer for about 20 minutes. Season with salt and pepper to taste.
  6. 6. Serve hot, garnished with fresh cilantro or a squeeze of lime if desired.
