  • 2 lbs corned beef brisket
  • 8 slices rye bread
  • 4 tablespoon mustard
  • 4 slices Swiss cheese
  • 1 cup sauerkraut
  • 2 tablespoon butter

Instructions 

  1. Preheat your smoker to 250°F.
  2. Smoke the corned beef brisket for about 2 hours or until it reaches an internal temperature of 190°F.
  3. Let the brisket rest for 15 minutes, then slice thinly.
  4. Spread mustard on each slice of rye bread.
  5. Layer the corned beef, Swiss cheese, and sauerkraut on 4 slices of bread.
  6. Top with the remaining bread slices.
  7. Melt butter in a skillet over medium heat.
  8. Grill sandwiches until bread is golden and cheese is melted, about 3-4 minutes per side.
