Ingredients 

Main Ingredients

  • 3 pounds Chuck Roast
  • 4 cups Beef Broth
  • 1 large Onion sliced
  • 4 cloves Garlic minced
  • 6 large Carrots cut into chunks
  • 4 large Potatoes cut into chunks
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 teaspoon Dried Thyme

Instructions 

  1. 1. Heat olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned.
  2. 2. Place the seared roast in the slow cooker. Add beef broth, onion, garlic, carrots, and potatoes.
  3. 3. Sprinkle salt, pepper, and thyme over the ingredients in the slow cooker.
  4. 4. Cover and cook on low for 8 hours, or until the meat is tender and the vegetables are cooked through.
  5. 5. Serve hot and enjoy!
