Ingredients 

Main Ingredients

  • 8 oz pasta any small shape
  • 1 lb shrimp peeled and deveined
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground
  • ¼ cup fresh parsley chopped

Instructions 

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large pot, bring water to a boil and cook shrimp until pink and opaque, about 2-3 minutes. Drain and let cool.
  3. In a large mixing bowl, combine cooked pasta, shrimp, cherry tomatoes, cucumber, and red onion.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour over pasta mixture and toss to coat.
  5. Garnish with fresh parsley and serve chilled.
