Shrimp Pasta Salad Recipe

Main Ingredients
- 8 oz pasta any small shape
- 1 lb shrimp peeled and deveined
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ¼ cup red onion finely chopped
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt to taste
- ½ teaspoon black pepper freshly ground
- ¼ cup fresh parsley chopped
Cook pasta according to package instructions. Drain and set aside.
In a large pot, bring water to a boil and cook shrimp until pink and opaque, about 2-3 minutes. Drain and let cool.
In a large mixing bowl, combine cooked pasta, shrimp, cherry tomatoes, cucumber, and red onion.
In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour over pasta mixture and toss to coat.
Garnish with fresh parsley and serve chilled.
