Instructions
1. In a mixing bowl, combine shrimp, cabbage, carrots, soy sauce, ginger, and garlic.
2. Place about 2 tablespoons of the mixture in the center of each egg roll wrapper.
3. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal with a bit of water.
4. Heat oil in a frying pan over medium heat. Fry the egg rolls until golden brown, about 2-3 minutes per side.
5. Drain on paper towels and serve hot.
