Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 cup Cooked rice
  • 1 cup Black beans, drained and rinsed
  • 1 cup Corn kernels
  • 4 large Flour tortillas
  • 1 cup Shredded cheese
  • 1 cup Salsa
  • 1 cup Sour cream

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the shrimp, chili powder, and cumin. Cook until shrimp is pink and cooked through, about 5 minutes.
  3. 3. In a mixing bowl, combine the cooked rice, black beans, and corn.
  4. 4. Warm the tortillas in a skillet or microwave.
  5. 5. Assemble the burritos by placing some of the shrimp mixture, rice mixture, cheese, salsa, and sour cream in each tortilla. Roll up and serve.
