Main Ingredients
- 1 lb Red beans dried
- 1 Onion chopped
- 1 Green bell pepper chopped
- 2 cloves Garlic minced
- 1 teaspoon Thyme dried
- 1 teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 4 cups Chicken broth
- 2 cups Cooked rice
1. Rinse and soak the red beans overnight.
2. In a large pot, sauté the onion, bell pepper, and garlic until softened.
3. Add the soaked beans, thyme, paprika, salt, and black pepper. Stir well.
4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for about 45 minutes, or until beans are tender.
5. Serve the beans over cooked rice.
