Ingredients 

Main Ingredients

  • 4 cups Potatoes peeled and diced
  • 2 cups Leeks cleaned and sliced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 2 tablespoons Butter
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste

Instructions 

  1. 1. Melt the butter in a large pot over medium heat.
  2. 2. Add the leeks and cook until soft, about 5 minutes.
  3. 3. Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. 4. Puree the soup using a blender until smooth.
  5. 5. Stir in the heavy cream, salt, and pepper. Heat through but do not boil.
  6. 6. Serve hot and enjoy!
