Pecan Chicken Salad

- 2 cups Cooked Chicken Breast, diced
- ½ cup Pecans, chopped
- ½ cup Dried Cranberries
- ¼ cup Mayonnaise
- 1 tablespoon Dijon Mustard
- 1 tablespoon Honey
- 1 stalk Celery, diced
- 1 tablespoon Lemon Juice
- to taste Salt
- to taste Black Pepper
1. In a large mixing bowl, combine the diced chicken, chopped pecans, dried cranberries, and diced celery.
2. In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, and lemon juice until smooth.
3. Pour the dressing over the chicken mixture and toss to coat evenly.
4. Season with salt and black pepper to taste. Serve immediately or refrigerate until ready to serve.
