Ingredients

  • 2 tablespoon Butter
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 cup Red Lentils rinsed
  • 4 cups Chicken Broth
  • 1 cup Coconut Milk
  • 1 cup Diced Tomatoes
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Melt butter in a large pot over medium heat.
  2. 2. Add chopped onion and minced garlic, sauté until soft.
  3. 3. Stir in curry powder, ground cumin, and ground coriander. Cook for 2 minutes.
  4. 4. Add red lentils, chicken broth, coconut milk, and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat and simmer for 30 minutes, until lentils are tender.
  6. 6. Blend the soup until smooth using a blender.
  7. 7. Season with salt and black pepper to taste. Serve hot.
