Main Ingredients
- 2 tablespoon Butter
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Curry Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 cup Red Lentils rinsed
- 4 cups Chicken Broth
- 1 cup Coconut Milk
- 1 cup Diced Tomatoes
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
1. Melt butter in a large pot over medium heat.
2. Add chopped onion and minced garlic, sauté until soft.
3. Stir in curry powder, ground cumin, and ground coriander. Cook for 2 minutes.
4. Add red lentils, chicken broth, coconut milk, and diced tomatoes. Bring to a boil.
5. Reduce heat and simmer for 30 minutes, until lentils are tender.
6. Blend the soup until smooth using a blender.
7. Season with salt and black pepper to taste. Serve hot.
