Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini zucchini, diced
  • 1 cup green beans, chopped
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 can kidney beans, drained and rinsed
  • 1 cup pasta (small shapes)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Add carrots, celery, zucchini, and green beans. Cook for 5-7 minutes.
  4. Add diced tomatoes, vegetable broth, and bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add kidney beans, pasta, oregano, and basil. Cook until pasta is tender.
  7. Season with salt and pepper to taste. Serve hot.
