Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 Mangoes, diced
  • 1 cup Cucumber, diced
  • ¼ cup Red onion, thinly sliced
  • ¼ cup Cilantro, chopped
  • 2 tablespoon Lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Heat a skillet over medium heat and add the olive oil.
  2. 2. Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
  3. 3. In a large mixing bowl, combine the mangoes, cucumber, red onion, and cilantro.
  4. 4. Add the cooked shrimp to the bowl.
  5. 5. Drizzle with lime juice and season with salt and black pepper. Toss to combine.
  6. 6. Serve immediately or chill in the refrigerator for 30 minutes before serving.
