Lemon Chicken Piccata
A classic Italian-American dish featuring chicken breasts cooked in a lemon-butter sauce with capers.

- 4 pieces Chicken Breasts boneless, skinless
- ½ cup All-purpose Flour
- ¼ cup Lemon Juice freshly squeezed
- ½ cup Chicken Broth low sodium
- ¼ cup Capers drained
- ¼ cup Butter unsalted
- 2 tablespoons Olive Oil
- to taste Salt
- to taste Black Pepper freshly ground
Season chicken breasts with salt and pepper, then dredge in flour.
Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown, about 3-4 minutes per side. Remove and set aside.
In the same skillet, add lemon juice, chicken broth, and capers. Bring to a boil, scraping up brown bits from the pan for extra flavor.
Return chicken to the skillet and simmer for 5 minutes. Add butter and let it melt into the sauce.
Serve chicken topped with the sauce. Garnish with lemon slices and parsley if desired.
