Ingredients

  • 4 pieces Chicken Breasts boneless, skinless
  • ½ cup All-purpose Flour
  • ¼ cup Lemon Juice freshly squeezed
  • ½ cup Chicken Broth low sodium
  • ¼ cup Capers drained
  • ¼ cup Butter unsalted
  • 2 tablespoons Olive Oil
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. Season chicken breasts with salt and pepper, then dredge in flour.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown, about 3-4 minutes per side. Remove and set aside.
  3. In the same skillet, add lemon juice, chicken broth, and capers. Bring to a boil, scraping up brown bits from the pan for extra flavor.
  4. Return chicken to the skillet and simmer for 5 minutes. Add butter and let it melt into the sauce.
  5. Serve chicken topped with the sauce. Garnish with lemon slices and parsley if desired.
