Main Ingredients
- 2 tablespoon olive oil
- 1 lb chicken breast, diced
- 1 lb andouille sausage, sliced
- 1 cup onion, chopped
- 1 cup bell pepper, chopped
- 1 cup celery, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup chicken broth
- 1 cup long grain rice
- 1 teaspoon Cajun seasoning
- 1 teaspoon dried thyme
- 2 pcs bay leaves
- 1 lb shrimp, peeled and deveined
- to taste salt and pepper
1. Heat olive oil in a large pot over medium heat. Add chicken and sausage, cook until browned.
2. Add onion, bell pepper, celery, and garlic. Cook until vegetables are tender.
3. Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, and bay leaves. Bring to a boil.
4. Reduce heat, cover, and simmer for 20-25 minutes, until rice is cooked.
5. Add shrimp, cook until pink and opaque, about 5 minutes. Season with salt and pepper to taste.
