- 200 g Saltfish soaked and flaked
- 1 cup All-purpose flour
- 1 teaspoon Baking powder
- 1 cup Water
- 1 small Onion finely chopped
- 1 small Scotch bonnet pepper finely chopped
- 2 cloves Garlic minced
- 1 teaspoon Thyme dried
- 1 teaspoon Black pepper ground
- to taste Salt
- for frying Vegetable oil
1. Soak the saltfish in water overnight to remove excess salt. Drain and flake the fish.
2. In a mixing bowl, combine flour, baking powder, and water to form a batter.
3. Add the flaked saltfish, onion, scotch bonnet pepper, garlic, thyme, black pepper, and salt to the batter. Mix well.
4. Heat vegetable oil in a frying pan over medium heat.
5. Drop spoonfuls of the batter into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.
6. Remove fritters from the oil and drain on paper towels. Serve hot.
