Ingredients 

Main Ingredients

  • 2 cups Cooked chicken, shredded
  • 1 cup Pineapple chunks fresh or canned
  • ½ cup Red bell pepper, diced
  • ¼ cup Red onion, finely chopped
  • ¼ cup Cilantro, chopped
  • ½ cup Mayonnaise
  • 2 tablespoons Lime juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper freshly ground

Instructions 

  1. 1. In a large mixing bowl, combine the shredded chicken, pineapple chunks, red bell pepper, red onion, and cilantro.
  2. 2. In a small bowl, whisk together the mayonnaise, lime juice, salt, and black pepper.
  3. 3. Pour the dressing over the chicken mixture and toss until everything is well coated.
  4. 4. Chill in the refrigerator for at least 30 minutes before serving.
