Ingredients 

Main Ingredients

  • 1 lb Dried white beans soaked overnight
  • 1 lb Ham hock
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 Carrots chopped
  • 2 Celery stalks chopped
  • 8 cups Chicken broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Thyme dried
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black pepper to taste

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5-7 minutes.
  2. 2. Add the soaked beans, ham hock, chicken broth, thyme, salt, and pepper to the pot. Bring to a boil.
  3. 3. Reduce heat to low, cover, and simmer for about 2 hours, or until beans are tender and the soup has thickened.
  4. 4. Remove the ham hock from the pot. Shred the meat and return it to the soup, discarding the bone.
  5. 5. Taste and adjust seasoning if necessary. Serve hot.
