Ingredients

  • 1 lb Ground Beef
  • 1 cup Chopped Carrots
  • 1 cup Chopped Celery
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Beef Broth
  • 1 cup Frozen Peas
  • 1 cup Frozen Corn
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil

Instructions 

  1. 1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. 2. Add the chopped carrots, celery, onion, and minced garlic to the pot. Cook until the vegetables are tender, about 5-7 minutes.
  3. 3. Stir in the diced tomatoes (with their juice), beef broth, frozen peas, and frozen corn.
  4. 4. Season with salt, black pepper, dried thyme, and dried basil. Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes.
  5. 5. Taste and adjust seasoning if necessary. Serve hot.
