Instructions
1. Preheat your grill to medium-high heat.
2. Toss the shrimp with olive oil, salt, and pepper.
3. Grill the shrimp for 2-3 minutes on each side until pink and opaque.
4. In a mixing bowl, whisk together all the ingredients for the Louie dressing.
5. Arrange the mixed greens, cherry tomatoes, cucumber, and hard-boiled eggs on a platter.
6. Top with the grilled shrimp and drizzle with Louie dressing.
