Salad Ingredients

  • 2 pieces Chicken Breasts boneless, skinless
  • 1 head Romaine Lettuce chopped
  • 1 cup Cherry Tomatoes halved
  • 1 cup Corn Kernels cooked
  • 1 cup Black Beans rinsed and drained
  • 1 cup Shredded Cheddar Cheese
  • 1 piece Avocado sliced
  • ½ cup Cilantro chopped
  • ¼ cup Lime Juice freshly squeezed
  • ¼ cup Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Season the chicken breasts with cumin, chili powder, salt, and black pepper.
  3. 3. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Let it rest for 5 minutes, then slice.
  4. 4. In a large mixing bowl, combine the romaine lettuce, cherry tomatoes, corn, black beans, shredded cheddar cheese, avocado, and cilantro.
  5. 5. In a small bowl, whisk together the lime juice and olive oil. Pour over the salad and toss to combine.
  6. 6. Top the salad with the grilled chicken slices. Serve immediately.
